    I make an incredible red clam sauce, which my friends LOVE, and I’m always asked for the recipe. There are TWO ways to make it: using a homemade marinara sauce or the CHEATER way. Below, the CHEATER version, which takes 20-25 minutes from start to finish!

1 can baby clams (drain and reserve water for use later)

1 can/jar of your favourite red pasta sauce
2-3 tbsp minced garlic
2-3 tbsp olive oil
Salt & pepper

Drain the can of clams, reserving the water in a dish to use later. Mince the clams and feel through to ensure there are no pieces of shell. Heat oil in pan on medium heat, then sauté garlic until golden, adding clams to sauté for a few minutes. Add can of sauce, blend with clams, and simmer for five minutes. Add reserved (clam) water to sauce, and simmer over low heat for 5-10 minutes, adding a sprinkle of salt/pepper (to taste). Be careful not to reduce the sauce too much; you want the sauce to remain a pourable (like thicker soup) consistency, not thick!

If you like a cream-based sauce, add a bit of butter and evaporated milk (or half/half) during the last five minutes of simmering.

Serve over hot linguine, spaghettini, or angel hair pasta. Sprinkle with grated Parmesan or Romano cheese.
