Recreating those nostalgic strawberry shortcake popsicles from the ice cream truck is a fun and delicious way to enjoy a classic treat. Here’s a recipe that captures the creamy, fruity, and crumbly goodness of those beloved popsicles:

Strawberry Shortcake Popsicles

Ingredients:

Strawberry Layer:
  • 2 cups fresh strawberries, hulled and chopped
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice
Vanilla Ice Cream Layer:
  • 2 cups vanilla ice cream, softened
Crumble Coating:
  • 1 cup shortbread cookies or vanilla wafers, crushed
  • 1/4 cup freeze-dried strawberries, crushed

Instructions:

Preparing the Strawberry Layer:
  1. In a medium saucepan, combine the chopped strawberries, granulated sugar, and lemon juice.
  2. Cook over medium heat, stirring occasionally, until the strawberries break down and the mixture thickens, about 10-15 minutes.
  3. Remove from heat and let cool completely.
Preparing the Crumble Coating:
  1. In a food processor, pulse the shortbread cookies or vanilla wafers until they form coarse crumbs.
  2. Add the freeze-dried strawberries and pulse until combined. Transfer the mixture to a shallow dish.
Assembling the Popsicles:
  1. Take your popsicle molds and spoon a layer of the cooled strawberry mixture into each mold, filling them about one-third of the way.
  2. Add a layer of softened vanilla ice cream on top of the strawberry layer, filling the molds to the top. Gently tap the molds on the counter to remove any air bubbles.
  3. Insert popsicle sticks into the molds.
  4. Freeze the popsicles for at least 4 hours or until completely solid.
Coating the Popsicles:
  1. Once the popsicles are fully frozen, prepare a baking sheet lined with parchment paper.
  2. Working quickly, remove the popsicles from the molds. Dip each popsicle into the crumble coating, pressing gently to adhere the crumbs to the popsicle.
  3. Place the coated popsicles on the prepared baking sheet and return to the freezer for an additional 30 minutes to set the coating.
