Ingredients:
For the Pancakes:

Instructions:
- Prepare the Pancake Batter:
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix the buttermilk, eggs, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined (it’s okay if the batter is a little lumpy).
- Divide and Color the Batter:
- Divide the pancake batter evenly into six small bowls.
- Add a few drops of food coloring to each bowl to create red, orange, yellow, green, blue, and purple batters. Mix each until the color is evenly distributed.
- Cook the Pancakes:
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
- Pour 1/4 cup of the colored batter onto the skillet, using a spoon to spread it out into a circle if needed.
- Cook until bubbles form on the surface and the edges look set, then flip and cook until the other side is golden brown. Repeat with each color.
- Make the Whipped Cream:
- In a large bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
- Assemble the Pancakes:
- Stack the pancakes in rainbow order: red, orange, yellow, green, blue, and purple.
- Top with a generous dollop of whipped cream.
- Add Toppings:
- Garnish with fresh berries and drizzle with maple syrup.
- Serve:
