Vegan Recipe: Vancouver Fusion Spicy Chickpea Burgers

These Spicy Chickpea Burgers are a satisfying vegan option with a kick, capturing the vibrant, multicultural food scene of Vancouver.

  • Prep Time: 15 minutes
  • Cook Time: 10 minutes
  • Servings: 4-6 burgers

Ingredients:

For the Chickpea Patties:

  • 1 can (15 oz) chickpeas, drained but reserve the liquid (it’s called aquafaba and it’s a great vegan egg replacer)
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped red onion
  • 2 tbsp Hellmann’s Vegan Mayonnaise
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • 1/4 tsp cayenne
  • 3/4 tsp kosher salt
  • Oil for cooking

For Spicy Mayo:

  • 1/2 cup Hellmann’s Vegan Mayonnaise
  • 2 tbsp Sriracha hot sauce

For Assembly:

  • 12 slider buns
  • ¼ cup Hellmann’s Vegan Mayonnaise
  • 1 cup shredded carrots
  • 1/2 cup thinly sliced purple cabbage

Method:

Prepare the Chickpea Patties:

1. In a large bowl, mash the chickpeas with 3 tbsp of the reserved liquid from can using a fork or potato masher until mostly smooth with some chunks remaining.

2. Add breadcrumbs, red onion, Hellmann’s Vegan Mayonnaise, garlic powder, cumin, salt, and cayenne. Mix thoroughly to combine.

3. Form the mixture into 12 small patties (about 2 oz each). Place the patties on a plate and refrigerate for at least 30 minutes to firm up.

4. Prepare the Spicy Mayo:

5. Mix Hellmann’s Vegan Mayonnaise and Sriracha until smooth.

Grill the Patties:

1. Preheat the grill to medium-high heat and lightly oil the grates to prevent sticking.

2. Carefully place the chilled patties on the grill. Cook for about 4-5 minutes on each side, or until they are golden brown and have grill marks. Be gentle when flipping to avoid breaking the patties.

3. Toast the Buns

4. Spread a thin layer of Hellmann’s Vegan Mayonnaise on the cut sides of the slider buns.

5. Place the buns mayo-side down on a hot skillet or grill. Toast until golden brown.

Assemble the Sliders:

 1. Spread spicy mayo on the bottom bun.

2. Place a chickpea patty on top, then add shredded carrots and cabbage. Top with the other half of the bun.

Meat Recipe: Seawall Sliders

Inspired by Vancouver’s sunny seawall and West Coast lifestyle, these juicy chicken sliders capture the fresh and vibrant spirit of the city.

  •   ¾ cup fresh or panko breadcrumbs
  •  ¼ cup milk
  • 1 tbsp olive oil
  • 1 cup minced onion
  • 1 ¼ tsp kosher salt, divided
  • 1 ½ tsp minced garlic
  • 3 tbsp Hellmann’s Real Mayonnaise
  • 1 tbsp minced fresh parsley or 1 tsp dried ¼ tsp cayenne pepper ¾ tsp ground black pepper
  • 1 lg Egg
  • Vegetable oil for cooking

To assemble:

  • 8 slider buns

Optional Toppings

  • Extra Hellmann’s Real Mayonnaise for topping
  • Lettuce
  • Tomato

Method:

1. Combine the breadcrumbs and milk in a large bowl and let them sit to absorb the liquid.

2. Heat the olive oil in a large pan over medium heat. Cook the onion with ¼ tsp salt until softened, about 7 minutes. Add the garlic and cook for another minute until fragrant. Let it cool slightly, then add to the breadcrumb mixture.

3.Mix the Hellmann’s Real Mayonnaise, parsley, remaining salt, black pepper, and cayenne pepper into the breadcrumb mixture.

4. When the mixture is cool, add the egg and ground chicken. Use your hands to mix gently but thoroughly. Form the mixture into 8 slider patties with oiled or dampened hands. The mixture will be soft. Chill the patties for 20 minutes to firm them up.

5. Preheat the grill to medium-high and oil the grates. Grill the patties for about 3-4 minutes per side, or until they reach an internal temperature of 165ºF.

6. Spread 4 tbsp of Hellmann’s Real Mayonnaise on the insides of the slider buns. Toast the buns on the grill until golden.

7. Let the sliders rest for a few minutes before serving. Assemble the sliders with extra Hellmann’s Real Mayonnaise and your favorite toppings.
