- 1/4 cup honey
- 1 tsp crushed red pepper flakes
- 1/2 tsp smoked paprika
- 1 tsp fresh lemon juice
- Pinch of salt
Instructions:
- Prepare the Fritter Batter:
- In a large mixing bowl, combine the fresh corn kernels, ricotta cheese, grated Parmesan, flour, cornmeal, eggs, green onions, garlic, smoked paprika, cayenne pepper (if using), salt, black pepper, fresh basil, and lemon juice. Mix until well combined and the batter is thick but not too dry. If it feels too dry, add a bit more ricotta or a splash of milk.
- Fry the Fritters:
- Heat a few tablespoons of olive oil in a large skillet over medium heat. Once hot, drop large spoonfuls of the fritter batter into the pan, flattening slightly with the back of the spoon to form small patties.
- Fry the fritters for about 3-4 minutes on each side, or until they are golden brown and crisp. Transfer to a paper towel-lined plate to drain any excess oil. Continue with the remaining batter, adding more oil to the pan as needed.
- Make the Spicy Honey Drizzle:
- In a small saucepan, gently heat the honey over low heat. Stir in the crushed red pepper flakes, smoked paprika, lemon juice, and a pinch of salt. Allow the mixture to warm for 1-2 minutes, stirring occasionally. Remove from heat and let it sit for a few minutes to infuse the flavors.
- Serve:
- Arrange the warm corn and ricotta fritters on a serving platter. Drizzle generously with the spicy honey and garnish with extra fresh basil or green onions if desired.
