Scrambled Egg Croissant Breakfast Sandwich

Ingredients:

For the Sandwich:

  • 4 large croissants, halved horizontally
  • 6 large eggs
  • 1/4 cup whole milk or heavy cream
  • 1/4 cup shredded cheddar cheese (optional)
  • 1 tbsp unsalted butter
  • Salt and pepper, to taste
  • 4 slices of cooked bacon or ham (optional)
  • 4 slices of cheese (e.g., Swiss, cheddar, or gouda)
  • 1 ripe avocado, sliced (optional)
  • Fresh spinach or arugula (optional)

For the Herb Mayo (Optional):

  • 1/4 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • 1 tbsp fresh chives or parsley, finely chopped
  • Salt and pepper, to taste

Instructions:

  1. Prepare the Herb Mayo (Optional):
    • In a small bowl, mix together the mayonnaise, Dijon mustard, lemon juice, chopped herbs, salt, and pepper. Set aside.
  2. Cook the Eggs:
    • In a bowl, whisk together the eggs, milk or cream, salt, and pepper until well combined.
    • Heat the butter in a non-stick skillet over medium-low heat until melted. Pour in the egg mixture.
    • Stir gently and continuously with a spatula, cooking the eggs slowly to achieve a soft, creamy texture. Just before the eggs are fully set, stir in the shredded cheddar cheese if using. Remove from heat.
  3. Assemble the Sandwiches:
    • If desired, spread a thin layer of the herb mayo on the cut sides of the croissants.
    • Place a slice of cheese on the bottom half of each croissant.
    • Divide the scrambled eggs evenly among the croissants, placing them on top of the cheese.
    • Add a slice of bacon or ham on top of the eggs, followed by a few slices of avocado, and a handful of fresh spinach or arugula if using.
    • Top with the other half of the croissant.
  4. Toast (Optional):
    • If you prefer your sandwich warm and the cheese melted, you can place the assembled sandwiches on a baking sheet and toast in a preheated oven at 350°F (175°C) for about 5 minutes, or until the cheese is melted and the croissant is slightly crispy.
  5. Serve:
    • Serve immediately with your favorite side, such as fresh fruit, a side salad, or hash browns.

Tips:

  • For a variation, try adding sliced tomatoes or caramelized onions.
  • You can also substitute the bacon or ham with smoked salmon or a vegetarian alternative.

This sandwich combines the buttery flakiness of a croissant with creamy scrambled eggs and your choice of fillings, making for a satisfying and indulgent breakfast treat!
