Loaded with crispy tofu, fresh veggies, and a rich peanut sauce, they’re a wholesome, customizable dish ideal for a quick weeknight dinner or meal prep.
Ingredients:
For the Tofu:
- 1 block (14 oz) firm tofu, pressed and cubed
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon sesame oil
For the Spicy Peanut Sauce:
- 1/3 cup creamy peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1–2 tablespoons sriracha (adjust for spice preference)
- 1 tablespoon honey or maple syrup
- 1/4 cup warm water (to thin, as needed)
- 1 garlic clove, minced
- 1 teaspoon grated ginger
For the Bowl:
- 2 cups cooked rice or quinoa
- 2 cups steamed broccoli
- 1 cup shredded carrots
- 1 red bell pepper, thinly sliced
- 1 cucumber, sliced (optional)
- 2 green onions, chopped
- Sesame seeds, for garnish
- Crushed peanuts, for garnish
- Lime wedges, for serving
Instructions:
- Prepare the Tofu:
- Preheat the oven to 400°F (200°C) or set up an air fryer.
- Toss the pressed and cubed tofu with soy sauce, cornstarch, and sesame oil in a bowl until evenly coated.
- Arrange the tofu cubes on a lined baking sheet or in an air fryer basket. Bake for 20-25 minutes, flipping halfway, or air fry at 375°F for 15 minutes until golden and crispy.
- Make the Spicy Peanut Sauce:
- In a bowl, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, sriracha, honey/maple syrup, garlic, and ginger. Gradually add warm water to achieve your desired consistency.
