A Towering Tribute: Jenna Rae Cakes x Loacker Celebrate 100 Years Of Sweetness (Win!)

What happens when Canada’s most beloved baking duo meets an iconic Italian confectionery brand turning 100? A 4-foot-tall, 100-layer cake, of course. In celebration of Loacker’s centennial anniversary, Jenna Hutchinson and Ashley Kosowan of Jenna Rae Cakes have teamed up with the wafer brand to create the ultimate edible masterpiece. Blending buttery layers, gold accents, and—naturally—loads of Loacker wafers, the collaboration is a testament to the power of passion, artistry, and a good reason to celebrate. In this exclusive Q&A, the twin sisters share how they brought the milestone cake to life, what fuels their creativity, and what’s next for the duo behind some of the most Instagrammable cakes on the planet. —Noa Nichol

How did this collaboration with Loacker come about, and what excited you most about taking on this challenge?

Loacker reached out to us with a shared vision of creating something truly unique and exciting to celebrate and toast their 100th anniversary milestone. Loacker products are so delicious (we snacked on lots during the baking process!) and they use only the best ingredients, just like we do here at Jenna Rae Cakes, so it was the perfect match. 

Celebrating a 100-year milestone is no small feat! How did you approach designing a cake that honours Loacker’s heritage while incorporating your signature Jenna Rae Cakes style?

One hundred years as a business is definitely something to celebrate, so it had to be a huge cake. Our vision for the cake was to create a tall, towering masterpiece! We initially considered a “naked” style to showcase all 100 layers, but decided against that because the Loacker products didn’t stand out as much that way. We also incorporated edible Loacker logos throughout the design, with a gold “100” topper to celebrate the 100-year milestone. The cake features our lemon cake on the top tier, our chocolate cake on the next tier, followed by our marble cake and our vanilla cake on the bottom layer. Designing Loacker’s 100th anniversary cake was such a special project, and it was fun to see our vision come to life in such a delicious way!  

Building a 4-foot-tall, 100-layer cake is an incredible undertaking! What were the biggest challenges you faced during the baking and assembly process?

The most obvious challenge was the size of the cake and how to best incorporate Loacker within each layer. With such a big project, time management was key. We had to bake, assemble and shoot social media content of the cake in a timely way to keep the cake fresh and in perfect condition for the big reveal. This was definitely a rewarding challenge!

Loacker wafers played a key role in this masterpiece—how did you incorporate them into the layers and overall structure of the cake?

Each tier of the cake was filled to the brim with Loacker wafers and Patisserie, as well as creamy ganache, salted caramel, yummy cake and buttercream. We enrobed the entire cake in white chocolate ganache, with chocolate ganache drips cascading beneath the Loacker treats arranged all over and around the cake. Covering the cake in white chocolate ganache allowed the Loacker wafers to truly shine!

The cake took four days to complete—can you walk us through a day-by-day breakdown of how you brought it to life?

Day 1 & 2: We kicked things off by baking all the cakes and preparing the fillings—including ganache and other toppings. I also made the white chocolate ganache that would later coat the entire cake, created the gold “100” topper, and printed the custom toppers. At the same time, I prepped the cake boards and dowel support system to ensure the structure was solid.

Day 3: I cut each cake into its tier size, then filled and stacked them with their specific flavors and layers. After crumb-coating the cakes to lock in freshness, I chilled them and applied two smooth layers of white chocolate ganache for a flawless finish.

Day 4: This was all about assembly and decoration. I stacked the cake using a combination of plastic and wooden dowels, patched any small cracks in the ganache, and added both dark chocolate and gold drips. For the gold effect, I painted the white chocolate drip using our Antique Gold Dazzle Dust.

The final step—and my favorite part—was decorating with Loacker products. I laid everything out, then used buttercream to attach each element, adjusting until the layout felt balanced and beautiful. This part takes time, but the result was so clean, crisp, and truly celebrated the Loacker products in the best way!

At Jenna Rae Cakes, celebrations truly are at the heart of everything we do. Our secret lies in the intention behind each creation—we don’t just make cakes; we create edible works of art that are deeply personal and thoughtfully designed to reflect the spirit of the moment being celebrated.

Whether it’s a birthday, wedding, baby shower, anniversary, or anything in between, we aim to capture the emotion of the occasion. Every detail matters—the texture, the colour palette, the tiny design elements that tie into the event’s theme or the personality of the person being celebrated.

We also believe a cake should taste just as incredible as it looks. From signature flavours to playful surprises inside, we want the entire experience—from the first glance to the last bite—to feel joyful, memorable, and one-of-a-kind.

What means the most to us is knowing we get to be a part of life’s most meaningful moments. From first birthdays to golden anniversaries, we’re honoured every single time someone chooses us to help make their celebration a little sweeter.

What are your favourite ways to elevate a birthday cake beyond just candles and frosting? Any tips for making homemade cakes feel extra special?

There are so many ways to elevate a birthday cake and make it feel truly special! It’s all about adding little details that surprise and delight, while keeping the focus on the celebration itself.

Looking back at this project, what was the most rewarding part of creating the ‘birthday cake of the century’?

The most rewarding part was seeing everything come together after all the hard work and creativity we poured into it. There’s something incredibly fulfilling about working on a project that celebrates such a monumental milestone, especially when it involves a brand with such a rich history and legacy like Loacker.

For us, it wasn’t just a cake—it was a part of something much bigger— a celebration of 100 years of quality, craftsmanship, and tradition. We were thrilled to be able to create something that honoured Loacker’s legacy while also bringing our own style and personal touch to it.

If you could create another over-the-top cake for any occasion or milestone, what would it be and why?

My sister Ashley and I are both huge Swifties, so designing Taylor Swift’s wedding cake would be an absolute dream! It would be such an honor to bring our signature whimsical-yet-elegant style to something so iconic. We already imagine all the subtle Easter eggs we could sneak in—she’s all about the details, and so are we!

What’s next for Jenna Rae Cakes? Any exciting projects or new flavours that fans should keep an eye out for?

Jenna just welcomed her baby boy, and we’re so excited to welcome the newest member of the JRC team. 

In the meantime, there’s always something exciting in the works at Jenna Rae Cakes! We’re constantly exploring new ways to push the boundaries of cake design, flavour, and creativity. We’re always thinking of new macaron flavours and expanding our offerings with new designs. We’re also currently working on our third cookbook, set to launch in fall 2027!

There’s so much to look forward to, and we can’t wait to share what’s next!
