We’re talking spirulina hemp bars, created by holistic nutritionist and natural foods chef extraordinaire (and native Vancouverite) Kate Horsman. We recently got a taste of these bars at an athlete’s fuelling forum, and just had (had) to get the recipe! Designed for sweat-enthusiasts, or those looking for an energizing hit of plant-based protein, healthy carbs and fat, Kate says the first time she made these bars for a bunch of runners they were devoured as fast as their 10k race splits. Containing just eight ingredients (think anti-inflammatory power-houses like spirulina, hemp, coconut oil and lightly sweetened with dates), they take next-to-no time to make and can be enjoyed straight away or stored in the fridge/freezer for later. Spirulina Hemp Bars
Ingredients:
10 pitted Medjool dates
1/2 cup hemp hearts
1 cup gluten-free oats
1/2 cup shredded coconut
1 cup almonds (use alternative nuts if preferred)
2 tsp spirulina
4 tbsp coconut oil (melted)
Pinch Himalayan salt
Optional Cacao Drizzle:
1/4 cup melted coconut oil
1/4 cup cacao powder
Method:
1. Add oil and dates into a high-powered blender, such as a Vitamix.
2. On medium speed, blend until everything is well incorporated. You’ll be left with an awesome piece of green delicious dough.
3. In a parchment-lined pan, spread and pat down your mixture for easy cutting of the bars.
4. For extra tastiness, you can dress these power bars with a drizzle of the cacao and oil whisked together.
5. Refrigerate until solid and enjoy right away, or store in the freezer for longer.
