Vancouver’s premier destination for elevated mixology is taking us on a journey through the wild, diverse landscapes of the Pacific Northwest. Botanist Bar at Fairmont Pacific Rim has officially launched the third edition of its celebrated Experiential Cocktail Series, aptly titled ‘Exploration of Microclimates’. Led by creative beverage director Grant Sceney and lead bartender Justin Powell, this new sensory collection is the latest evolution of the bar’s award-winning Cocktail Lab.

This edition explores how coastal waters, inland valleys, and temperate rainforests shape the flavors and textures in your glass. “Shells, apples, and mushrooms are symbols of place,” says Sceney. “Each carrying the story of their ecosystem into liquid form”.

The Three Acts of Exploration

• Under the Sea: A saline “love letter” to the coast featuring local dry gin, akvavit, dill, cucumber, and alkaline minerals, served with a sea shell.
• Forbidden Fruit: Inspired by the sun-drenched inland valleys, this pisco and Poire William blend uses clarified apple and hibiscus to capture the irresistible allure of the orchard.
• Kinopio: Representing the dark, beautiful corners of the rainforest, this complex mix of Cuban rum, mezcal, matsutake mushrooms, and coniferous tonic proves that beauty thrives in the shadows.
