How to Make a White Peach Bellini

la marcaWhen a bottle of La Marca Prosecco arrived on my desk (conveniently, the Friday before we were hosting a lunch party), there was nothing else to do but pick up some white peaches from the farmers’ market and make bellinis. The crisp citrus-y sparkling Italian wine with note of green apple cuts perfectly through the sweetness of the peaches for an ideal August celebratory drink:

Method: Quarter and purée three white peaches in a blender, funnel into a glass bottle. Fill six champagne flutes one-fifth full of peach purée (about 2 tbsp), top with cold La Marca Prosesso. Garnish with a frozen blackberry or mint sprig.
