L’Abattoir Serves Up the West Coast in a Cocktail

L’Abattoir mixologist Katie Ingram shares one of the Vancouver restaurant’s signature cocktail recipes:

"This is a very Vancouver cocktail, and it was inspired from the West Coast lifestyle. It is made with fresh avocado, fresh lime and Apfelkorn—a German apple schnapps. It is savoury, unique, and healthy. The Avocado Gimlet has been on the list at L’Abattoir for almost two years now. It is the most popular drink on the bar menu, with over 5,000 sold last year. People really love it. The drink has a wonderful silky texture and is like an adult breakfast smoothie."

Ingredients:

1/4 Fresh whole (peeled and pitted) avocado (Approx. 40 grams)

45 ml Greenall’s gin

15 ml Berentzen Apfelkorn schnapps

30 ml Fresh lime juice

20 ml Simple syrup
 

Method:

Muddle the avocado in a shaker tin. Add ingredients, dry shake, add ice, shake very hard, then fine strain into a chilled cocktail coupe. No garnish.
