Whether you’re lucky enough to enjoy brunch with mom this year or it’s something you can drop off and celebrate virtually, we can all agree she is deserving of some R&R! It’s time to let her sleep in, relax and enjoy a made-with-love Mother’s Day brunch with these recipes (including amazing homemade pop tarts) from Vitamix! —Vita Daily
Hot Chai Latte
1-1/2 cups (360 ml) warm skim milk, about 160°F (70°C)
1-1/4 cup (300 ml) chai tea, brewed
1 teaspoon ground cinnamon
Sweetener, if desired
Place warm milk into the Vitamix container and secure the lid. Select the lowest setting. Start the machine, slowly increase to Variable 6, and blend for 45 seconds. (If making only a half recipe for a single serving, reduce the blending time to 30 seconds.) Stop the machine and remove the lid. Add chai tea and cinnamon, and secure the lid. Select Variable 5 and Pulse 3 to 5 times to incorporate. Sweeten if desired. Notes: It’s best to heat the milk either in the microwave or on the stove top until it reaches a slow simmer. Recipe makes about 3½ cups warm skim milk foam.
Oatmeal Cranberry Pancakes
1-1/2 cups (360 ml) milk
1 large egg
2 tablespoons light olive oil
3/4 cup (60 g) rolled oats, uncooked
1-1/4 cup (150 g) whole wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup (25 g) flax meal
1/4 cup (25 g) dried cranberries
2 tablespoons sunflower seeds
Place milk, egg, oil and 1/4 cup (20 g) rolled oats into the Vitamix container in the order listed and secure lid. Select Variable 1. Turn machine on and slowly increase speed to Variable 6. Blend for 20 seconds. Combine the remaining oats, flour, baking powder, baking soda, salt and flax meal in a large bowl, stirring to combine. Pour wet mixture into the dry ingredients and mix gently by hand to combine. Stir in the dried cranberries and sunflower seeds. Allow mixture to set for 10 minutes before cooking.
Homemade Pop Tarts
For the pop tarts:
2-1/2 cup (310 g) all-purpose flour
1 teaspoon (3 g) salt
2 teaspoons granulated sugar
1 cup (225 g) cubed butter, chilled
1/4 cup (60 ml) ice water
3/4 cup (180 ml) fruit preserves, your choice of flavor
1 egg plus 1 teaspoon water, beaten
Preheat oven to 375°F (190°C) Line 2 baking sheets with parchment paper. Place the flour, salt, and sugar into your Vitamix container and secure the lid. Select Variable 6 and Pulse 3 to 4 times to combine the ingredients. Remove the lid plug and continue to Pulse while dropping the chilled butter cubes through the lid plug opening, a few at a time, until all the butter has been added. Stop the machine and remove the lid. Use a spatula to scrape the sides of the container. Secure the lid and begin Pulsing again on Variable 6 while drizzling the ice water through the lid plug opening. (If your dough is not moving, stop and scrape again, being sure to work the spatula underneath the blades.) Once all the ingredients are well combined, remove to a mixing bowl and shape into a ball. Cut into two equal portions and wrap with plastic wrap. Refrigerate for 1 hour. Lightly dust a work surface with flour and roll each dough ball into a 13-inch x 11-inch (33-cm x 28-cm) rectangle. Cut each rectangle into 8 equal pieces. Evenly space 4 pieces on each lined baking sheet. Place 1 heaping Tablespoon of jam in the center of each dough piece on the baking sheets and spread out evenly, leaving ½ inch (1¼ cm) of dough all around the edges. Gently place each of the 8 remaining dough pieces over the top of the jam and seal the edges with your fingertips. Using the prongs of a fork, crimp all the edges and place in the freezer for at least 1 hour. Once pastries are frozen, remove from freezer and brush with egg wash. Bake for 30 minutes, or until golden brown.
For the frosting:
2 tablespoons half & half
1/4 teaspoon vanilla extract
1 cup (120 g) powdered sugar
While pastries are baking, rinse your container and add half & half, vanilla extract, and powdered sugar in the order listed. Secure the lid. Select Variable 1 and start the machine. Quickly move up to Variable 10 and blend for 10 to 15 seconds, or until combined. Set aside. Once pop tarts are finished baking, allow to cool for 10 minutes on a wire rack. Place 1 tablespoon of frosting on each pop tart and use an offset spatula to spread over the pastry. Top with sprinkles if desired. Store in an airtight container.
