Vegan Chickpea “Tuna” Sandwich (Serves 4)
8 slices of Promise Gluten Free Quinoa and Chia Loaf
Two cups of rinsed canned chickpeas
2/3 of a cup of diced dried apricots
1/3 of a cup of vegan mayonnaise
1/3 of a cup of diced red onion
1 teaspoon of Dijon or grainy mustard
2 tablespoons of chopped fresh dill
1 teaspoon of lemon juice and half a teaspoon or so of lemon zest
Salt and pepper
Put all the ingredients together in a bowl and mash together to achieve the desired texture. Serve with lettuce and your choice of fresh herbs on Promise Quinoa and Chia loaf.
