If you can’t get to the Fairmont Pacific Rim in Vancouver for a holiday tipple this season (and really, you should if you’re able!), the hotel’s Lobby Lounge is sharing some festive cocktail recipes (one cold, one hot) you can create at home. —Vita Daily
2 cups whole milk
2 cups heavy cream
2 cinnamon sticks
2 nutmegs, freshly grated
1 vanilla bean, split and seeds removed
6 eggs, separated
150mgs granulated sugar
90 ml Spiced Rum
Combine milk, cream and spices into a saucepan and bring to a boil. Once boiled, remove from heat and allow to steep for 30 minutes. In a separate bowl, mix eggs yolk and sugar, whisk until thoroughly combined. Slowly pour spiced, heated milk into egg yolks while constantly stirring (do not stir too fast or you’ll end up with scrambled eggs). Continue to slowly add until all is combined, then add the cognac and rum. Store in a food safe container and keep refrigerated. Serve cold with a grating of nutmeg on top.
Hot Buttered Rum
45ml Spiced Rum
100ml hot water
30mgs spiced buttered sugar (200mgs butter + 400mgs demerara sugar + 1 pinch each nutmeg, cinnamon, clove)
Add all ingredients to the mug and stir with cinnamon stick.
