Spring is getting ready to, well, spring, and we’re craving a salad to match! Here’s a recipe for a delicious spring salad that’s perfect for lunch; you can also add other spring vegetables like asparagus, peas or radishes to this salad for even more flavour and nutrition.
For the salad:
6 cups mixed salad greens
1 cup fresh strawberries, sliced
1/2 cup crumbled feta cheese
1/4 cup sliced almonds, toasted
1/4 cup thinly sliced red onion
For the dressing:
1/4 cup olive oil
2 tablespoons balsamic vinegar
1 tablespoon honey
1 tablespoon Dijon mustard
Salt and pepper, to taste
In a large bowl, combine the salad greens, sliced strawberries, crumbled feta cheese, sliced almonds, and red onion. In a separate bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until well combined. Pour the dressing over the salad and toss everything together until the salad is well coated with the dressing. Serve immediately and enjoy your delicious spring salad!
