With the Jewish holiday Passover coming up in April, here’s a recipe for a delicious noodle kugel that is perfect for your holiday table (or just to try!).
- 12 oz wide egg noodles
- 6 large eggs
- 1 cup sugar
- 1 cup unsalted butter or margarine, melted
- 1 cup unsweetened applesauce
- 1 cup raisins
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1 cup matzo meal
- 1 cup crushed matzo
Preheat your oven to 350°F (180°C) and grease a 9×13 inch baking dish. Cook the noodles according to the package instructions until al dente. Drain and set aside. In a large mixing bowl, beat the eggs and sugar together until light and fluffy. Add the melted butter or margarine, applesauce, raisins, cinnamon, and salt. Mix well. Add the cooked noodles, matzo meal, and crushed matzo to the bowl. Mix everything together until well combined. Pour the mixture into the greased baking dish and smooth the top with a spatula. Bake for 50-60 minutes or until golden brown and set. Let the kugel cool for a few minutes before cutting into squares and serving.
