Heart-Shaped Strawberry Hand Pies

  • 2 cups frozen strawberries
  • 1/3 cup granulated sugar
  • 1/3 cup water
  • 1/2 lime, juiced & zested
  • 1 pinch salt
  • 3 tablespoons Fleischmann’s Cornstarch
  • 1 double crust pie dough, chilled
  • Egg wash, to finish
  • Coarse sugar, to finish
  1. To a skillet over medium low heat add strawberries, sugar, water, lime juice, lime zest & salt.
  2. Bring to a gentle simmer & continue cooking until strawberries begin to break down, about 8 minutes. Stir in the cornstarch & remove from heat as soon as mixture thickens. Set aside to cool.
  3. Roll out prepared pie dough to ¼ inch thick. Using a heart shaped cookie cutter, slice dough into 4-inch (roughly) hearts.
  4. Transfer half the heart cut outs to a lined baking sheet. Brush the edges with egg wash & add a spoonful of the strawberry filling to the center. Top with a second heart cut out & seal the edges with a fork.
  5. Brush the top with remaining egg wash & sprinkle with coarse sugar.
  6. Bake at 375(f) degrees for 15 minutes, until golden. Serve warm or room temperature!
