Pasqua Lapaccio Salento

Lapaccio has its origin in Italy’s Salento area, the real heart of wine production in Apulia. This area is particularly renowned for the cultivation of the Primitivo grape. The red Primitivo grapes are harvested and immediately pressed at controlled temperature. Fermentation is carried out with maceration on the skins for 12-14 days and daily pumping-over to extract more tannins and anthocyanins at 20-24°C. 50% of the wine is aged in barrique for 30-40 days. The result is a wine with a depth of colour; a warm nose that reveals intense cherry and plum aromas; warm and rich, harmonious on the palate, and ideal for tasty pasta, grilled meats and seasoned cheeses. Serve at 16-18°C.

Pasqua Passionesentimento Rosso Veneto

Here’s a red wine like love and passion. A blend of Corvina and Croatina with a percentage of Merlot, which the drying period renders velvetier still. The grapes are picked by hand and left to dry in wooden crates in the drying loft. There, by means of humidity control and air circulation, the grapes lose around 30% of water content and achieve high sugar concentration. Given that the grapes have differing ageing times, vinification takes place separately in steel tanks; thus the blend is created at the end of this process. PassioneSentimento is aged in oak tonneau barrels for 6 months. The result is a dense and deeply coloured wine, full of concentrated black and red cherry flavour, and hints of leather and spice. The palate has a layered texture, with muscular tannins providing a long finish.

Wakefield Estate Chardonnay 2021

At release, this wine is a pale straw with a slight green hue to the edge. It has delightful aromas of white peach, nectarines and subtle citrus zest, which join hints of cashew and cream. On the palate, fresh flavours of stone fruit combine with cashews and an underlying toastiness from the barrel fermentation to deliver a mouth-filling, enjoyable wine. It has a clean, elegant palate, a zesty acid backbone and long, persistent finish.

The wine undergoes a slow, cool fermentation to maintain the grapes delicate aromas, before a secondary fermentation in stainless steel tanks that helps produce a crisp, fruit-forward finish. Pair with mushroom and prosciutto pasta, grilled salmon with mango salsa, or Mother’s Day brunch mimosas.
