Egg in the Hole Avocado Toast

Ingredients:

  • 2 slices of bread (whole grain, sourdough, or your favorite type)
  • 1 ripe avocado
  • 2 eggs
  • 1-2 tbsp butter (or olive oil for cooking)
  • Salt and pepper, to taste
  • Optional toppings: red pepper flakes, cherry tomatoes, microgreens, chives, or feta cheese
  • Lemon juice, a squeeze (optional, to prevent avocado from browning)

Instructions:

  1. Prepare the Avocado:
    • Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
    • Mash the avocado with a fork until you reach your preferred consistency (smooth or chunky).
    • Season with salt, pepper, and a squeeze of lemon juice if desired.
  2. Prepare the Bread:
    • Using a round cookie cutter or the rim of a glass, cut a hole in the center of each slice of bread.
  3. Cook the Egg in the Hole:
    • Heat a large skillet over medium heat and add 1 tablespoon of butter or olive oil.
    • Once the butter is melted and bubbly, place the slices of bread in the skillet.
