Egg-In-The-Hole Avocado Toast

May 30, 2024

Egg in the Hole Avocado Toast is a delicious and fun twist on traditional avocado toast. Here’s a step-by-step recipe to make this tasty dish:

Egg in the Hole Avocado Toast

  • 2 slices of bread (whole grain, sourdough, or your favorite type)
  • 1 ripe avocado
  • 2 eggs
  • 1-2 tbsp butter (or olive oil for cooking)
  • Salt and pepper, to taste
  • Optional toppings: red pepper flakes, cherry tomatoes, microgreens, chives, or feta cheese
  • Lemon juice, a squeeze (optional, to prevent avocado from browning)

  1. Prepare the Avocado:
    • Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
    • Mash the avocado with a fork until you reach your preferred consistency (smooth or chunky).
    • Season with salt, pepper, and a squeeze of lemon juice if desired.
  2. Prepare the Bread:
    • Using a round cookie cutter or the rim of a glass, cut a hole in the center of each slice of bread.
  3. Cook the Egg in the Hole:
    • Heat a large skillet over medium heat and add 1 tablespoon of butter or olive oil.
    • Once the butter is melted and bubbly, place the slices of bread in the skillet.
    • Crack an egg into the hole of each slice of bread.
    • Cook until the egg whites are mostly set, about 2-3 minutes. You can cover the skillet with a lid to help the eggs cook more evenly.
    • Carefully flip the bread and egg to cook the other side until the egg reaches your desired doneness (another 2-3 minutes for a runny yolk, longer for a firmer yolk).
  4. Assemble the Avocado Toast:
    • Once the egg-in-the-hole toasts are ready, remove them from the skillet and place them on a plate.
    • Spread the mashed avocado around the egg on each slice of bread, avoiding the egg yolk.
  5. Add Optional Toppings:
    • For extra flavor and texture, add optional toppings like red pepper flakes, halved cherry tomatoes, microgreens, chopped chives, or crumbled feta cheese around the avocado.
  6. Serve:
    • Serve immediately while the toast is warm and the eggs are freshly cooked.

  • For Extra Flavor: Rub a cut garlic clove on the toast before adding the egg for a subtle garlic flavor.
  • For Crispier Bread: Lightly toast the bread slices in a toaster before cutting the hole and cooking them in the skillet.

Enjoy your Egg in the Hole Avocado Toast! This recipe combines the creamy goodness of avocado with the delightful surprise of an egg in the center, making for a satisfying and visually appealing meal.
