1. Avocado Coconut Lime Popsicle
Ingredients:
- 2 ripe avocados
- 1 can of coconut milk
- 1/4 cup of honey or agave syrup
- Juice of 2 limes
- Zest of 1 lime
- Pinch of salt
Instructions:
- Cut the avocados in half, remove the pit, and scoop the flesh into a blender.
- Add the coconut milk, honey, lime juice, lime zest, and salt.
- Blend until smooth and creamy.
- Pour the mixture into popsicle molds and insert sticks.
- Freeze for at least 4 hours or until solid.
- To remove, run warm water over the outside of the molds for a few seconds.
2. Balsamic Strawberry Black Pepper Popsicle
Ingredients:
- 2 cups of fresh strawberries, hulled and chopped
- 2 tablespoons of balsamic vinegar
- 1/4 cup of honey
- 1/2 teaspoon of freshly ground black pepper
- 1/4 cup of water
Instructions:
- In a small saucepan, combine the strawberries, balsamic vinegar, honey, black pepper, and water.
- Cook over medium heat until the strawberries soften and release their juices, about 5-7 minutes.
- Use a blender or immersion blender to puree the mixture until smooth.
- Allow the mixture to cool slightly before pouring it into popsicle molds.
- Insert sticks and freeze for at least 4 hours or until solid.
- To remove, run warm water over the outside of the molds for a few seconds.
3. Matcha Mango Swirl Popsicle
Ingredients:
- 1 ripe mango, peeled and chopped
- 1/2 cup of coconut milk
- 2 tablespoons of honey, divided
- 1 teaspoon of matcha powder
- 1/2 cup of plain Greek yogurt
Instructions:
- In a blender, puree the mango with 1 tablespoon of honey until smooth. Set aside.
- In a small bowl, whisk the matcha powder with the remaining tablespoon of honey until well combined.
- In another bowl, mix the Greek yogurt with the matcha mixture.
- Alternate spooning the mango puree and matcha yogurt into the popsicle molds to create a swirl effect.
- Insert sticks and freeze for at least 4 hours or until solid.
- To remove, run warm water over the outside of the molds for a few seconds.
