3 Weird But Wonderful Popsicles To Make @ Home This Summer

1. Avocado Coconut Lime Popsicle

Ingredients:

  • 2 ripe avocados
  • 1 can of coconut milk
  • 1/4 cup of honey or agave syrup
  • Juice of 2 limes
  • Zest of 1 lime
  • Pinch of salt

Instructions:

  1. Cut the avocados in half, remove the pit, and scoop the flesh into a blender.
  2. Add the coconut milk, honey, lime juice, lime zest, and salt.
  3. Blend until smooth and creamy.
  4. Pour the mixture into popsicle molds and insert sticks.
  5. Freeze for at least 4 hours or until solid.
  6. To remove, run warm water over the outside of the molds for a few seconds.

2. Balsamic Strawberry Black Pepper Popsicle

Ingredients:

  • 2 cups of fresh strawberries, hulled and chopped
  • 2 tablespoons of balsamic vinegar
  • 1/4 cup of honey
  • 1/2 teaspoon of freshly ground black pepper
  • 1/4 cup of water

Instructions:

  1. In a small saucepan, combine the strawberries, balsamic vinegar, honey, black pepper, and water.
  2. Cook over medium heat until the strawberries soften and release their juices, about 5-7 minutes.
  3. Use a blender or immersion blender to puree the mixture until smooth.
  4. Allow the mixture to cool slightly before pouring it into popsicle molds.
  5. Insert sticks and freeze for at least 4 hours or until solid.
  6. To remove, run warm water over the outside of the molds for a few seconds.

3. Matcha Mango Swirl Popsicle

Ingredients:

  • 1 ripe mango, peeled and chopped
  • 1/2 cup of coconut milk
  • 2 tablespoons of honey, divided
  • 1 teaspoon of matcha powder
  • 1/2 cup of plain Greek yogurt

Instructions:

  1. In a blender, puree the mango with 1 tablespoon of honey until smooth. Set aside.
  2. In a small bowl, whisk the matcha powder with the remaining tablespoon of honey until well combined.
  3. In another bowl, mix the Greek yogurt with the matcha mixture.
  4. Alternate spooning the mango puree and matcha yogurt into the popsicle molds to create a swirl effect.
  5. Insert sticks and freeze for at least 4 hours or until solid.
  6. To remove, run warm water over the outside of the molds for a few seconds.
