Make These Rocket Popsicles @ Home This Long Weekend

Blast off to childhood nostalgia with this recipe for making red, white, and blue rocket popsicles at home!

Ingredients:

Red Layer:

  • 1 cup strawberries, hulled
  • 1-2 tablespoons honey or sugar (to taste)
  • 1/4 cup water

White Layer:

  • 1 cup coconut milk (full fat for creamier texture)
  • 1-2 tablespoons honey or sugar (to taste)
  • 1/2 teaspoon vanilla extract

Blue Layer:

  • 1 cup blueberries
  • 1-2 tablespoons honey or sugar (to taste)
  • 1/4 cup water

Instructions:

  1. Prepare the Red Layer:
    • In a blender, combine strawberries, honey (or sugar), and water.
    • Blend until smooth.
    • Pour the mixture evenly into popsicle molds, filling each about 1/3 full.
    • Place the molds in the freezer for about 1 hour, or until the layer is mostly frozen.
  2. Prepare the White Layer:
    • In a bowl, mix coconut milk, honey (or sugar), and vanilla extract.
    • Once the red layer is mostly frozen, pour the coconut milk mixture evenly on top of the red layer, filling each mold another 1/3 full.
    • Return the molds to the freezer for about 1 hour, or until the white layer is mostly frozen.
  3. Prepare the Blue Layer:
    • In a blender, combine blueberries, honey (or sugar), and water.
    • Blend until smooth.
    • Once the white layer is mostly frozen, pour the blueberry mixture evenly on top, filling each mold to the top.
    • Insert popsicle sticks.
    • Freeze the molds for at least 4 hours, or until completely frozen.
  4. Unmold and Enjoy:
    • To remove the popsicles from the molds, run the bottom of the molds under warm water for a few seconds.
    • Gently pull the popsicles out and enjoy your homemade red, white, and blue rocket popsicles!

These popsicles are a fun and festive treat, perfect for celebrating summer holidays or just enjoying a refreshing snack.
