Blast off to childhood nostalgia with this recipe for making red, white, and blue rocket popsicles at home!
Ingredients:
Red Layer:
- 1 cup strawberries, hulled
- 1-2 tablespoons honey or sugar (to taste)
- 1/4 cup water
White Layer:
- 1 cup coconut milk (full fat for creamier texture)
- 1-2 tablespoons honey or sugar (to taste)
- 1/2 teaspoon vanilla extract
Blue Layer:
- 1 cup blueberries
- 1-2 tablespoons honey or sugar (to taste)
- 1/4 cup water
Instructions:
- Prepare the Red Layer:
- In a blender, combine strawberries, honey (or sugar), and water.
- Blend until smooth.
- Pour the mixture evenly into popsicle molds, filling each about 1/3 full.
- Place the molds in the freezer for about 1 hour, or until the layer is mostly frozen.
- Prepare the White Layer:
- In a bowl, mix coconut milk, honey (or sugar), and vanilla extract.
- Once the red layer is mostly frozen, pour the coconut milk mixture evenly on top of the red layer, filling each mold another 1/3 full.
- Return the molds to the freezer for about 1 hour, or until the white layer is mostly frozen.
- Prepare the Blue Layer:
- In a blender, combine blueberries, honey (or sugar), and water.
- Blend until smooth.
- Once the white layer is mostly frozen, pour the blueberry mixture evenly on top, filling each mold to the top.
- Insert popsicle sticks.
- Freeze the molds for at least 4 hours, or until completely frozen.
- Unmold and Enjoy:
- To remove the popsicles from the molds, run the bottom of the molds under warm water for a few seconds.
- Gently pull the popsicles out and enjoy your homemade red, white, and blue rocket popsicles!
