In this exclusive series of Q&As, get an inside look at the creative minds behind the viral moments, their inspirations, and what it takes to stand out in the digital world. Below, our interview with gluten-free goddess Olivia Parsons (check out her website, too!). —Noa Nichol

You’ve been cooking gluten-free for years—what’s the biggest misconception about gluten-free baking?

I ate a strict gluten-free diet for five years due to gut issues. My motto at the time was to prove that “eating gluten-free doesn’t have to be fun-free,” and I still believe that! A lot of people hear that something is gluten-free and automatically assume it’s dry and flavorless—which some packaged products can be—but home baking doesn’t have to be.

My most important tip is to follow a recipe that was specifically developed as gluten-free. I also suggest using the exact product recommendations from the author, as different gluten-free flours vary in absorbency, flavor, and texture. The recipe was likely tested and perfected with a specific blend, so straying from it can compromise the final result. That being said, it’s completely possible to create moist, chewy, and delicious cakes, cookies, and breads that are impressively gluten-free.

Your content includes hosting tips and dinner party prep—what are your top three hosting essentials?

  1. A beautiful tablescape doesn’t need to be expensive. I have three neutral tablecloths, one set of dishes, one set of wine glasses, etc. For each dinner party, I’ll usually buy one new accessory that complements the theme but remains relevant for future gatherings—whether it’s funky cloth napkins, a new serving dish, or colorful candlesticks. Let the menu bring the theme to life when entertaining on a budget.
  2. Prep ahead of time! Make a list of all the dishes you plan to make and break them down into smaller prep tasks. Each night leading up to the dinner party, tackle one of those tasks—whisk a dressing, mix focaccia dough, set the table, or cook elements in advance. That way, when the big day arrives, all you have to do is heat, assemble, and enjoy.
  3. Save the clean-up for after guests leave. I want to be present with my guests, so after the meal, I’ll clear any leftover food and stack plates in the sink to remove visual clutter. But I leave the actual washing up for later. It makes for a much more relaxed evening.

What’s the most challenging recipe you’ve ever developed, and how did you perfect it?

I’ve been on a French macaron journey over the past year, and if you’re a baker, you know they are notoriously difficult. Because of this, I wanted to showcase my skills by making macarons for a recent television audition.

As with most things, practice makes perfect. Every attempt—some successful, others not—taught me a new trick for creating consistently great macarons. The key is not to get discouraged by failures; they’re valuable learning experiences (and still delicious!). My audition bake required three practice rounds, and I think they turned out quite cute and tasty!

Your food photography is stunning! Do you have any tricks for making dishes look as good as they taste?

If you want your food to look impressive, add a colorful garnish. Choose an ingredient that either appears in the dish or complements its flavors while adding a contrasting pop of color.

For example:

  • Bright green basil leaves on top of a red tomato pasta
  • A dollop of whipped cream and fresh summer berries on a slice of cheesecake
  • A sprinkle of fresh parsley and a few lemon slices on grilled chicken

It’s all about adding color and freshness—those small details make a dish instantly more appetizing!

If you could only cook with five ingredients for the rest of your life, what would they be?

  • Flour – to make pasta or bread
  • Tomatoes – Roma, cherry, canned… I love them all
  • Chicken – my go-to protein
  • Red pepper flakes – I put them on everything
  • Buffalo Mozzarella – the best cheese ever
