Below, our interview with Montreal mom Gigi Madanipour—Noa Nichol

As a busy mom, what’s your go-to quick and easy meal that the whole family loves?

My family loves any version of my one-skillet pastas. They’re creamy, filling and the perfect comfort food. The kids are partial to the ones that are cheesy of course! And I never mind making them because they’re literally on the table in 30 minutes with minimal cleanup- which is always a win.

Your content makes cooking feel accessible and fun—what’s your philosophy when it comes to food?

Whether you’re cooking for yourself or for your family, food shouldn’t stress you out. It should be fun and relaxing! I truly believe that things taste better when they’re made with love. If you’re not enjoying the process, you’re not going to look forward to cooking!

How do you come up with new recipes that resonate with your audience?

As much as I love to cook, I also love to travel and eat out! So I’m constantly inspired by things I see and taste. I’ll just try to find a way to make it a little simpler, a little more everyday. I just came back from vacation and I had the best coconut shrimp.  I’m definitely going to attempt an air fryer version of that soon! My audience is like me, they don’t want to be cooking for two hours on a Tuesday night- so if I can find an easy way to make something delicious, I’m going to share it!

What’s the best piece of cooking advice you’ve ever received?

When it comes to hosting, make sure you are utilizing different cooking methods. If everything you have to make is on the stovetop, you are going to be going from one pot to the next and it will get stressful.  I like to have some meat on the grill, veggies roasting in the oven, and then a nice risotto or simple pasta on the stove top! It’s much more manageable and it makes hosting more fun.

If you could host a dinner party for three famous food lovers, who would you invite and what would you serve?

Ina Garten, because I think she would have some amazing stories and she’s bound to bring a delicious dessert! I would have Martha Stewart in a heartbeat. I watched her Netflix special and I am mesmerized by her story. And by default, maybe she would bring Snoop Dog with her since they’re friends 😉

I’d make a lot of cocktails, some easy appetizers that look gorgeous like whipped feta and marinated olives- and for the mains I’d do a beautiful roasted tenderloin, an easy pasta with mascarpone sauce and my go to salad for guests: arugula with a pesto vinaigrette. An easy menu that can be prepped ahead of time so I can spend more time with my new friends 😉
