Your aesthetic is all about pink, pastries, and perfect bakes. What inspires your signature style in the kitchen?
I think they call it millennial pink? Guilty. Honestly I’m just a girl who has a big sweet tooth. While I do enjoy a little treat after dinner, I mostly enjoy baking for my friends and family – it’s the way I show my love. My recipes range from quick and easy to more involved desserts but always approachable. I find inspiration from flavours I grew up with (think Vietnamese creme brûlée), from my travels with my family (I recently attended pastry school in Paris and am currently on a journey to make my version of the best croissants), from my loved ones (I’m always looking for fun ways to incorporate gingerbread into desserts because it’s my husband’s favourite) and special moments in my life.
As a new mom, how has your approach to baking and content creation changed?
Baking, for me, is therapeutic, it’s my form of self-care. After a long day of caring for someone else, I crave some me-time and my favourite spot to enjoy me-time is in my kitchen. I found myself racing against the clock sometimes, trying to get something sweet into the oven before my son wakes from his nap, it’s so unpredictable which is how my croissant series came to be. I took store-bought croissants and transformed them into gourmet pastries. They’re easy, delicious, affordable and can be made while your baby is napping. When it comes to creating content, I want my audience to feel as though they’re right in my kitchen baking with me so I just set up my tripod and bake as I usually would. Sometimes things turn out and sometimes they don’t but it’s all part of the process and the fun.
What’s the one dessert recipe that every beginner baker should master first?
I think everyone needs a good chocolate chip cookie recipe in their back pocket and a stash in their freezer, no really, I always have a batch of cookie dough in the freezer …for emergencies. What makes a good CCC is so subjective, everyone has their own idea of what they consider to be the best one. For me, I love a thicker cookie, it needs to have a crisp exterior with a soft gooey centre, chopped chocolate over chocolate chips, a hint of espresso powder and flaky salt, always. It’s accessible because you don’t need any fancy equipment but whenever possible, choose good ingredients, they make a big difference.
If you could bake with any celebrity chef for a day, who would it be and why?
Ina Garten! I grew up watching Ina every weekend on the Food Network. I love how effortless she makes everything look, her recipes are delicious and her and Jeffrey’s love is so sweet. I just know we’d have so much fun in the kitchen together. She could teach me to make her famous marry me chicken, we’d share stories about living in Paris and of course, bake her outrageous brownies, topped with a scoop of vanilla ice-cream and laugh because store-bought is fine.
