The Strawberry Coconut Bliss blends fresh strawberry slush with coconut cream and coconut milk jelly, creating a tropical, creamy treat. The Strawberry Coconut Candy features handmade strawberry cheese foam, coconut water, jelly, and fresh strawberry chunks for a perfect balance of sweetness and texture. These limited-time drinks capture the vibrant flavours of the season.

The Victor’s Cherry Blossom Menu

The Victor is embracing spring with a cherry blossom-inspired menu running from March 28th to April 23rd. Highlights include the Kyoto Matcha Biru, a refreshing Asahi draft infused with matcha, and two floral, fruit-forward cocktails—the Sakura Club, made with Empress elderflower rose gin and cherry vodka, and the Hampton Spritz, featuring Hampton Water Rosé, peach, and lemon. The menu also features beautifully crafted dishes like the Cherry Blossom Roll, made with Hokkaido scallop, bluefin, and sea bream, and the Chilean Sea Bass, served with Tuscan white bean peperonata and barrel-aged balsamic. To finish, the Sakura Matcha Mousse Cake pairs matcha sponge cake with cherry blossom green tea mousse and cherry coulis.

Fable Diner on West Broadway is celebrating the season with a selection of cherry-inspired drinks available until April 30th. The Cherry Mimosa combines house-made cherry syrup with organic prosecco for a bubbly, citrusy treat. The Cherry Milkshake is a nostalgic indulgence featuring vanilla ice cream, cherry syrup, and pink vanilla whip, while the Cherry Bourbon Sour blends Jim Beam with cherry syrup, lemon juice, and egg white for a smooth, tangy cocktail. For a festive afternoon, the Cherry Blossom Afternoon Tea blends traditional flavours with refined culinary artistry, offering a selection of delicate pastries, savoury bites, and high-quality teas, all inspired by the beauty of spring.

Cherry Blossom Afternoon Tea at Fairmont Hotel Vancouver

From now until May 25th, Fairmont Hotel Vancouver’s Cherry Blossom Afternoon Tea is a seasonal celebration of delicate flavours and floral-infused teas. The experience includes freshly baked Morello cherry and buttermilk scones with house-made preserves, along with beautifully crafted savory bites such as pork menchi katsu sandwiches and salted cod inari. Sweet offerings include a sakura matcha mousse cake, miso caramel tart, and black sesame shortbread. Guests can also enjoy specialty teas like jasmine gold dragon and sencha Kyoto cherry rose, along with sakura-infused vodka and lavender-infused gin cocktails.

The Secret Garden at H Tasting Lounge

Running until May 11th, The Secret Garden at H Tasting Lounge transforms the waterfront domes into an ethereal spring escape inspired by vintage air travel and the beauty of cherry blossoms. With pastel-hued hot air balloons floating above and cascading floral garlands surrounding each private dome, the atmosphere is nothing short of magical. Guests can sip artfully crafted cocktails and enjoy seasonal flavours while taking in stunning waterfront views. Every detail of this experience is designed to transport diners to a whimsical springtime retreat.

Beaucoup Bakery’s Sakura Collection

Beaucoup Bakery welcomes spring with the new Sakura Collection available from now until April 27th, featuring a selection of Japanese-inspired pastries and chocolates. The Sakura Strawberry pastry combines hojicha sponge with strawberry and cherry blossom compote, while the Sweet Potato Mochi Croissant features butter mochi and purple sweet potato almond frangipane layered within Beaucoup’s signature butter croissant. Other highlights include the Dango Croissant, topped with three-colour dango and red bean pastry cream, and the Matcha Sesame Melon Pan, a soft milk bun with a matcha cookie topping and black sesame pastry cream. Drawing inspiration from hanami, the Japanese tradition of flower viewing, these delicate, limited-edition treats are designed to capture the essence of spring.

Miku’s Sakura Kaiseki

Miku, ABURI Restaurant Canada’s Michelin Guide-recommended contemporary Japanese restaurant, is celebrating spring with its annual Sakura Kaiseki. Available for a limited time starting March 31, this multi-course dining experience highlights the delicate and bright flavours of the season. Head Chef Martin Simicek has crafted a refined menu featuring premium seasonal ingredients.

The experience includes dishes like Botan Ebi Tart with umami soy crème fraîche and Kaviari caviar, an elegant selection of sashimi, and Octopus with miso mayo and yuzu kosho vinaigrette. Guests will also enjoy Duck Breast with a sunchoke-beet purée, a chef’s selection of sushi, and a Strawberry Lychee Mousse for dessert. Sake pairings and flights are also available to enhance the experience.

Mon Paris Pâtisserie’s Spring-Themed Creations

Mon Paris Pâtisserie is set to offer a beautiful assortment of spring-themed confections crafted by Chef Elena Krasnova. From chocolate eggs with stunning edible flowers to caramelized nut-studded showpieces, these treats are available for pre-order and in-store pickup starting April 1.
