Here are three easy dinner ideas that can be made both with and without meat — perfect for mixed households or hosting plant-based guests without doubling your workload:


1. Taco Night, Two Ways
Base: Warm corn or flour tortillas, avocado, chopped lettuce, tomatoes, salsa, lime wedges.
Meat Option: Sautéed ground beef or shredded chicken with taco seasoning.
Veg Option: Spiced black beans, sautéed mushrooms, or lentil taco “meat.”
Tip: Set everything out buffet-style so everyone builds their own!


2. Stir-Fry Split
Base: Stir-fried veggies (broccoli, bell peppers, snap peas, carrots) with garlic, ginger, and soy sauce.
Meat Option: Toss in sliced chicken, beef, or shrimp.
Veg Option: Add tofu or edamame for plant-based protein.
Tip: Cook the veggies in one pan, divide, then add proteins separately at the end.


3. Pasta Two-Ways
Base: Pasta of your choice with a tomato, pesto, or creamy sauce, plus roasted veggies like zucchini, mushrooms, or cherry tomatoes.
Meat Option: Add sautéed sausage, meatballs, or grilled chicken.
Veg Option: Keep it veggie-forward or add chickpeas for texture and protein.
Tip: Make the sauce and pasta together, then divide into two pans to stir in the different proteins.
