There’s nothing quite like the high-stakes chaos of a professional kitchen—and no show has captured it quite like The Bear. The Emmy award-winning FX series, which has gripped audiences with its raw, emotional storytelling and fast-paced culinary drama, is the inspiration behind a one-night-only dinner hosted by the Pacific Institute of Culinary Arts (PICA) in Vancouver. Back for its third iteration, The Bear Pop-Up Dinner returns to PICA’s Blue Hat Bistro on Wednesday, July 24, bringing the show’s signature tension and tenderness to the plate.
As the fourth season of The Bear drops on Disney+ in Canada this month, PICA’s own Chef Lian Cosby steps into the fictional shoes of Carmy Berzatto—the show’s tortured culinary genius turned sandwich-shop saviour. Alongside Chef Ben Kiely and a brigade of talented culinary students, Cosby will present a five-course meal that channels the spirit of the series: complex, creative, deeply personal, and never afraid to push the limits.
From 6 to 9 p.m., guests can expect a dining experience that mirrors the emotion and artistry of The Bear. The evening opens with focaccia served with whipped ricotta, Calabrian chili, honey, and flaky sea salt, followed by an elegant quail egg dish with asparagus, béarnaise, and kaviar. The third course—agnolotti with preserved lemon cream, guanciale, peas, and summer savory—offers a taste of summer in full bloom. A surprise fourth course, inspired by the just-released season, will be revealed on the night, keeping diners on their toes. The finale? A decadent chocolate dessert laced with salted caramel, hazelnut, and pretzel, plus a few sweet little somethings to finish the meal.
Cosby is no stranger to the fine-dining world that The Bear so vividly portrays. Before bringing her expertise to PICA, she sharpened her skills in some of Canada and Europe’s most esteemed kitchens, including Au Pied de Cochon, Toqué!, and Boulevard Kitchen & Oyster Bar. Her time alongside Michelin-starred chefs and Canadian culinary champions makes her uniquely suited to lead this immersive and emotionally resonant dining experience.
