Loam Bistro, the beloved Lower Lonsdale brunch destination that’s won over North Vancouver locals (and plenty of SeaBus travelers), is making a delicious leap into dinnertime with a limited-edition Summer Pasta Pop-Up. Starting July 18, the cozy, light-filled bistro will transform Friday and Saturday nights into a celebration of all things Italian, serving up a menu that’s equal parts comfort and culinary craft.
From 5 to 9 p.m. each weekend, Head Chef and Co-Owner Rahul Negi invites diners to take a seat and savour a menu steeped in Italian tradition and West Coast freshness. The evening begins with a tempting lineup of antipasti—think heirloom burrata caprese drizzled in basil oil, grilled peaches with prosciutto and mint sauce, and the salty-sweet punch of roasted bell pepper and anchovy bruschetta.
Of course, the star of the show is pasta—and here, the pastabilities are truly endless. Handmade rigatoni alla bolognese, spaghetti carbonara with guanciale, gnocchi coated in romesco and sage butter, and a truffle mushroom risotto rich with porcini and Grana Padano are just a few of the standout dishes. For those looking to branch out, bold options like Gochujang & Burrata Gnocchi and Calabrian Prawns Rigatoni deliver a spicy twist, while a seafood risotto rounds things out with a luxurious blend of scallops, prawns, and house-made shrimp paste.
Don’t skip the dolce: Mango tiramisu and pistachio-crusted poached pear provide the perfect sweet landing after a carb-filled adventure.
To sip, Loam has partnered with Vancouver’s own Sansorium to offer a thoughtfully curated selection of wine and sparkling options, many low- and zero-alcohol, with additions from New and Old World vineyards planned as the summer series evolves.
For Chef Negi, whose pasta pedigree includes five-star hotel kitchens and Vancouver icons like Joe Fortes and Robba di Matti, this pop-up marks a homecoming of sorts. “I’ve always had a love for pasta and how it can be complemented so elegantly by fresh, simple ingredients,” he says. “We’re excited to take our brunch guests on a new culinary journey—one inspired by the soulful, timeless flavours of Italy.”
