This summer, Fairmont Waterfront is turning up the cool factor in downtown Vancouver with a sweet new twist. The hotel’s beloved ARC Restaurant has teamed up with local dessert darlings HYPE Chocolate to launch a limited-time Artisanal Ice Cream Pop-Up—and yes, it’s as dreamy as it sounds.

Nestled right beside ARC’s buzzy patio, the pop-up is a playful celebration of local flavour, creativity, and community, dishing out exclusive frozen treats every weekend from 11 a.m. to 7 p.m. throughout July, August, and early September.

If you’re not already familiar with HYPE Chocolate, here’s the scoop: co-founded by Scott Symons and Marlayna Pincott in 2022, the brand has become known for its bold flavours, inventive sweets, and thoughtful collaborations. This partnership with Fairmont Waterfront is their most luxurious yet, combining Fairmont’s eco-conscious ethos with HYPE’s dessert-forward ingenuity.

What’s on the menu? Think Lemon, Wildflower Honey & Thyme sorbet, inspired by the hotel’s rooftop garden and buzzing bee apiary. Or how about a Salted Chocolate creation, made with sea salt from Vancouver Island—a nod to the Fairmont’s coastal roots. And for those who like a little drama with their dessert, don’t miss the Vanilla Bean & Brown Butter Croissant ice cream topped with edible gold. Yes, really.

There’s more: HYPE’s cult-favourite seasonal B.C. berry cups drizzled with warm chocolate are also making a guest appearance, offering the perfect balance of refreshing and indulgent for sunny afternoons.

“This collaboration is a celebration of local talent, playful indulgence, and the kind of unexpected, elevated experiences that we love sharing with our guests,” says Mike Pagnacco, Director of Food & Beverage at Fairmont Waterfront. And honestly? We couldn’t agree more.
