Your No Sugar Added Salted Caramels promise the same creamy pull and silky melt as the originals — what was the biggest surprise when you first tasted the maltitol-sweetened version, and how did you get the texture so spot-on?
The most pleasant surprise was how closely the flavour of the NSA Salted Caramels resembled that of our classic caramels! We took our classic caramel recipe to ensure it offers the similar texture our customers love, but sweetened it with a plant-based sweetener (maltitol) to guarantee the same texture as our classic caramels.
Can you walk us through why maltitol was chosen as the sweetener — were there taste tests or blind panels that swayed the decision, and what feedback stuck with you?
While we continue to test various sugar alternatives, our customers already love the taste of our current No Sugar Added couverture chocolate made with maltitol. This made it a natural choice to incorporate maltitol in the recipe development for our No Sugar Added Salted Caramels.
Salted caramel begs for pairings — what drinks (coffee, wine, tea, or something unexpected) do you recommend to elevate the No Sugar Added Salted Caramel experience?
Milk chocolate salted caramels pair beautifully with a Riesling wine to add brightness to the caramel, or a bold black coffee for contrast. For dark chocolate salted caramels, a red wine—the warmth of a Zinfandel works perfectly! For an unexpected pairing, the No Sugar Added Salted Caramels are a wonderful complement to a charcuterie board, since the sweetness cuts the richness of the meat quite nicely and balances the saltiness of both the meats and cheeses.
