If smashed potatoes had a veggie-forward, party-ready sibling, this would be it. Smashed broccoli and cheese bites are everything we want in a cozy snack or side: crispy edges, gooey centres, and perfectly portioned for grabbing straight off the tray.
They’re easy enough for a weeknight, impressive enough for guests, and endlessly adaptable depending on what’s in your fridge. Think of them as the ultimate way to make broccoli feel indulgent—without losing its green credibility.
Here’s how we make ours.
Smashed Broccoli & Cheese Bites (Makes 18–22 bites)
Ingredients
• 2 large heads broccoli, cut into medium florets
• Olive oil
• Salt and freshly cracked black pepper
• 1 tsp garlic powder (or 1 small clove grated garlic)
• ½ tsp smoked paprika or chili flakes (optional)
• ¾ cup shredded sharp cheddar
• ½ cup shredded mozzarella or gruyère
• ¼ cup finely grated parmesan
• Optional extras: chopped chives, green onions, crispy bacon bits, or a pinch of dried herbs
How to Make Them
1. Parboil the broccoli
Bring a large pot of salted water to a boil. Add broccoli florets and cook for 6–8 minutes, until just fork-tender but not falling apart. Drain well and let steam dry—this step helps the bites crisp up beautifully.
2. Smash into individual bites
Preheat oven to 425°F (220°C). Line a baking sheet with parchment. Arrange broccoli florets spaced apart. Use the bottom of a glass to gently smash each floret into a bite-sized round.
Drizzle with olive oil and season with salt, pepper, garlic, and paprika or chili flakes.
3. Roast until golden
Bake for 18–22 minutes, flipping once, until edges are crisp and lightly browned.
4. Add the cheese
Sprinkle each smashed floret with a small mound of cheddar, mozzarella (or gruyère), and parmesan. Add any extras now.
Return to the oven for 8–10 minutes, until cheese is melted, bubbling, and lightly golden.
5. Finish and serve
Finish with chopped chives or green onions and a final crack of black pepper. Serve warm.
Why These Work So Well
By keeping each piece individual, you get maximum crispiness—and that irresistible cheese-to-broccoli ratio in every bite. They’re perfect as a snack, a game-day nibble, a kid-friendly veggie win, or a side dish that disappears before dinner even hits the table.
Serve with garlic aioli, ranch, or a squeeze of lemon, or enjoy them exactly as they are. One tray is never enough. —Vita Daily
