What started as a late-night conversation between peers has officially blossomed into a culinary movement. The Island Restaurant Collective (IRC)—a group of Vancouver Island’s most esteemed chefs and restaurateurs—is stepping off the ferry and heading to Alberta to share the unique flavors of the West Coast.
Founded on friendship and a deep respect for regional ingredients, the IRC’s mission is to define Vancouver Island’s evolving culinary identity while supporting one another through the unique challenges of running remote, independent restaurants.
The Calgary Takeover: March 4, 2026
The collective is making its off-island debut with a collaborative dinner event at the acclaimed Deane House, in partnership with the iconic River Café. This isn’t just a meal; it’s a storytelling experience.
- The Experience: A six-course dinner starting with welcome cocktails and canapés.
- The Talent: Guest chefs from Pluvio, Fox & Monocle, Wild Mountain, and Ugly Duckling will be in the kitchen and at the table sharing Island stories.
- The Cost: $216 per guest (including gratuity), with optional wine or non-alcoholic pairings. Info and reservations here.
Meet the Collective
While more members are expected to join soon, the current heavy hitters include:
- Pluvio restaurant + rooms (Ucluelet): Warren Barr & Lily Verney-Downey.
- Wild Mountain (Sooke): Oliver Kienast & Brooke Fader.
- Fox & Monocle Café (North Saanich): Tracie Zahavich & Ross Bowles.
- Uchida Eatery (Victoria): Yasu Uchida.
- Ugly Duckling (Victoria): Corbin Mathany.
“The IRC is a chance to celebrate Vancouver Island’s culinary voice together, and to create opportunities to share it beyond the Island,” says Corbin Mathany, chef and owner of Ugly Duckling.
Whether you’re a Calgary local or a Vancouverite looking for an excuse for a mountain getaway, this dinner is the ultimate way to experience the landscapes, farms, and fisheries of the Island in one sitting. —Noa Nichol
