Authentic rustic Italian cuisine has an incomparable appeal—a unique combination of fresh flavours from the Old Country, a historic hub of culinary excellence. This fresh take on Italian fare has officially arrived in the heart of North Vancouver’s bustling Shipyards District, inside the boutique Seaside Hotel.
Welcome to the highly anticipated Provisions Italiana, which opened its doors less than a month ago. The restaurant blends beloved Italian classics with contemporary touches, crafted by executive chef Morgan Macdonald, executive sous chef Christina Agenbag, and their team—welcoming diners into a sophisticated yet friendly, lively atmosphere.
As beautiful as the modern interior is—and it truly is—it’s the food and warm, attentive service that will have guests coming back for more. Showcasing a passion for simple, timeless, rustic recipes, Provisions Italiana focuses on high-quality ingredients, resulting in a menu that transports you straight to Italy.
At Provisions, sharing is encouraged. It’s the perfect way to sample a variety of dishes and create a more memorable dining experience.
The thoughtfully curated menu features several standout vegetable small plates, including roasted cauliflower with harissa hummus, Marcona almonds, and dates, and grilled radicchio with parmesan and aged balsamic—both incredibly flavourful.
Salads are equally enticing. Highlights include the roasted beet with lemon yogurt, goat cheese, pistachio, and dill, as well as the burrata salad with house-made, slightly sweet tomato jam, basil, and extra virgin olive oil, served with rustic bread to soak up every last bite.
Naturally, no Italian meal is complete without pasta. The orecchiette with beef cheek Bolognese and whipped ricotta is deeply satisfying, while the handmade linguini delivers a true taste of Italy’s culinary heritage.
And then there’s pizza. Crafted from a light, airy house-made dough and prepared in the time-honoured al taglio tradition, these Roman-style pies are baked in large rectangular trays and cut into square slices. The result? A crisp, caramelized crust with a slightly chewy centre. The pepperoni pomodoro with garlic aioli dipping sauce is a must-order.
Complementing the cuisine is a playful cocktail program, including the fan-favourite “Garden Party”—a delightful mix of clarified spirit with coconut milk, Strega (a classic Italian herbal liqueur), and a beet shrub foam.
“The main vibe is making Italian spirits approachable,” says bar manager Wyeth Maiers. “Ingredients like amaro or grappa can sometimes feel intimidating, so I wanted to create a menu that acts as a fun gateway for people to learn more about them.”
A well-curated wine list, featuring both New and Old World selections, ensures there’s something for every palate.
At Provisions Italiana, culture and cuisine come together in an experience rooted in tradition—with just the right amount of modern flair. One visit, and you’ll be planning your return before the last bite. —Michelle Hopkins
