While the squirrels nosh on your leftover jack-o-lantern, follow this
easy peasy recipe for pumpkin pudding.
In
a large bowl, whisk together the following ingredients:
1.5 cups
canned pumpkin (not spiced)
1.25 c homogenized or 2 per cent milk
3/4
c brown sugar
2 eggs
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp
salt
Pour into a baking dish and bake for about an hour at 350.
Serve with vanilla ice cream or yogurt.
