Chilly temperatures are practically synonymous with a bowl of warm soup. That’s why All-Clad Canada has partnered with Canadian chef Alex Chen to create this wonderful recipe for one-pot Italian Wedding Soup (perfect for keeping us toasty warm this cold season) using All-Clad Canada’s D3 Stainless Dutch Oven. Italian Wedding Soup
200 g onion, medium dice
15 g minced garlic
150 g medium-dice carrots
150 g medium-dice red peppers
150g medium-dice fennel
1 bay leaf
150 g Fregola Sarda
5 litres chicken stock
Parmesan cheese, 20 g grated fine
2 whole eggs
Bouquet garni (leek, thyme, oregano, parsley, tie in a cheese cloth)
20 g chopped parsley
Meatball
450 g ground beef
20 g bread crumbs
1 whole egg
1 garlic cloves, minced
1/2 large onion, fine minced
15 g chopped parsley
Salt and pepper to season
Mix all the meat together and start rolling the balls into 5 g each meatballs. In the All-Clad d3 Stainless Dutch Oven, cook vegetables for 2 mins. Add in chicken stock and bring it to a boil, turn it to simmer. Add in Fregola and simmer for 10 minutes. Add in meatballs and simmer for 5 more minutes. Take the All-Clad D3 Stainless Dutch Oven, off the heat. In a bowl whisk together eggs and 20 g of grated parmesan cheese. While the soup is hot, whisk in the egg. Serve with chopped parsley.
