Eighties movies posters and nineties hip hop set the scene for Bao Down Gastropub + Raw Bar, Vancouver’s latest pan-Asian restaurant concept at Olympic Village.
From the sky-high Singapore Slaw (a coleslaw served with a sesame & umeboshi vinaigrette) to the sauce-pan sized Filipino Halo Halo dessert (an icy treat with toppings like coconut jelly and purple yam ice cream), the shareable portions make it perfect for group dining. “We make it epic,” says co-owner Matt Adolfo. Even with so many new items on the menu, baos are still king—try the Luau, crispy pork belly served with the famous steamed buns. The restaurant’s colourful wood slat walls and hashtagged street art bring a modernized Eastern vibe to a West Coast audience.
