How To Make A Rainbow Pancake Cake With Frosting

Ingredients:

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Food coloring (red, orange, yellow, green, blue, purple)

For the frosting:

  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, beat the eggs and then add the milk, melted butter, and vanilla extract. Whisk until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if there are a few lumps.
  4. Divide the pancake batter evenly into six separate bowls.
  5. Add a few drops of food coloring to each bowl of batter, using different colors for each bowl. Mix well until the batter is evenly colored.
  6. Preheat a non-stick skillet or griddle over medium heat. Lightly grease the surface with butter or cooking spray.
  7. Using a ladle or measuring cup, pour one color of batter onto the skillet to form a small pancake, about 4 inches in diameter. Cook until bubbles form on the surface, then flip and cook for an additional minute or until cooked through. Repeat with the remaining colored batters, making a stack of pancakes of each color.
  8. Once all the pancakes are cooked, let them cool completely.
  9. To prepare the frosting, pour the heavy cream into a mixing bowl and beat with an electric mixer until soft peaks form. Add the powdered sugar and vanilla extract, and continue beating until stiff peaks form.
  10. Place one pancake of each color on a serving plate, starting with purple at the bottom and ending with red on top.
  11. Spread a layer of frosting on top of the purple pancake. Place the blue pancake on top and frost it as well. Repeat this process, alternating pancakes and frosting, until you reach the top of the stack.
  12. Once the cake is assembled, you can decorate it further with additional frosting, sprinkles, or fruit if desired.
  13. Refrigerate the pancake cake for at least 1 hour to allow the flavors to meld together and the frosting to set.
  14. Slice the pancake cake into wedges and serve. Enjoy your beautiful and delicious rainbow pancake cake!
