When it comes to having pizza on the fly, more often than not we’re disappointed.
But at the petite new pizza spot Pi Co., we were impressed with the Neapolitan-style ‘zas—and you get to choose exactly how you want your pizza, from the dough through to the sauce, toppings and cheese. Then it’s popped into the 1,000-degree oven for 60 secs (sometimes 90) and emerges with the crisp crust and melted cheese we could eat on the daily. (And the custom salads, such as the Caprese but with beets replacing the tomatoes, rounded out our lunch break nicely.)
In fact, it took us about the same time to eat our pizza as it does to cook it. Gone in 60 seconds, the pizza edition. —Karen Kwan
