Classic Diwali Recipe: Gulab Jamun

Gulab Jamun is one of the most beloved and traditional desserts for Diwali celebrations. These soft, syrup-soaked dough balls are easy to make and perfect for sharing with family and friends.


Ingredients:

For the Dough Balls:

  • 1 cup khoya (milk solids), grated
  • 1/4 cup all-purpose flour
  • 1/4 tsp baking soda
  • 2 tbsp milk (or as needed)
  • Ghee or oil for deep frying

For the Sugar Syrup:

  • 1 1/2 cups sugar
  • 1 1/2 cups water
  • 4-5 green cardamom pods, crushed
  • 1/2 tsp rose water or a few saffron strands (optional)

Instructions:

  1. Prepare the Sugar Syrup:
    • In a saucepan, combine sugar, water, and cardamom pods. Heat on medium flame, stirring until the sugar dissolves.
    • Let it simmer for 5-7 minutes until slightly sticky (not too thick). Add rose water or saffron, if using, and keep warm.
  2. Make the Dough:
    • In a mixing bowl, combine grated khoya, all-purpose flour, and baking soda. Mix well.
    • Gradually add milk, 1 tablespoon at a time, to form a smooth, soft dough. Do not over-knead.
  3. Shape the Gulab Jamun Balls:
    • Divide the dough into small, equal portions. Roll each portion into a smooth, crack-free ball. Cover with a damp cloth to prevent drying.
  4. Fry the Dough Balls:
    • Heat ghee or oil in a deep frying pan on medium heat. Test by dropping a small piece of dough—it should sizzle and rise slowly.
    • Fry the balls in small batches, stirring gently, until they are golden brown on all sides. Use low heat to ensure they cook evenly without burning.
  5. Soak in Syrup:
    • Immediately transfer the fried gulab jamuns into the warm sugar syrup. Let them soak for at least 1-2 hours to absorb the syrup fully.
  6. Serve:
    • Serve warm or at room temperature, garnished with chopped pistachios or almonds.
