Why Winterlust Domes Are The Ultimate Holiday Dining Experience

Just in time for the holidays, The Westin Bayshore, Vancouver brings back its private outdoor snow globe dining experience. The H Tasting Lounge (HTL) combines two of our favourite winter pastimes—cozy igloos and fine dining—within five heated, private outdoor wood-and-glass Snow Globe Domes.

This year’s Winterlust menu comes from chef Andrii Olshevskyi. “My inspiration was to create a menu inspired by the flavours and seasonal products of winter—food that evokes warmth and home, like the meatballs, which are my grandmother’s recipe,” says Olshevskyi, who hails from Ukraine. “I still make the meatballs exactly as she did, and I hope everyone enjoys them.”

Other standout dishes include the Fall Hearty Salad (the ultimate winter salad), harissa-spiced tiger prawns, grilled asparagus, and artichoke ravioli.

If you’re unsure what to pair with your meal, head sommelier Mya Brown has you covered. Brown seeks out small-lot producers focused on environmental sustainability, both locally and abroad. For me, she chose Times, a 2017 Cabernet Sauvignon from Aasha Wines on the Naramata Bench. “The real focus here is a single-vineyard Cabernet Sauvignon—unique and truly special,” she noted. Smooth and bold—I had to agree.

To finish off your Winterlust experience, indulge in pastry chef Martha Ebro’s decadent Walk in the Forest—a dream of milk chocolate, raspberry cream, and matcha chocolate soil.

Gather your friends and family and get cozy in a heated patio snow globe, where the only thing competing with the cuisine are the spectacular views of the North Shore Mountains and Coal Harbour waterfront. Don’t worry about the chill—each dome is equipped with a heater and blankets to keep you snug throughout your meal.

Perfectly timed for the holiday season, Winterlust at H Tasting Lounge, located at The Westin Bayshore, Vancouver (1601 Bayshore Drive), is open daily for lunch and dinner through March 16, 2026. Reservations via Tock are essential. Maximum six guests per dome.
