Do You Know the Ramenman?

ramenmanFrom ingredients to interiors, Vancouver’s newest ramen joint adds an unconventional twist to Japanese comfort food.

The Ramenman is the only place you’ll find imaginative broths like chicken stew (slow-boiled chicken bones crushed into a thick stew) and chicken clam (10 per cent of this broth is comprised of a white-wine reduction). And let’s not forget the protein pièces de résistances: chicken (and original pork) cha-siu cooked evenly, sous-vide style. We hear there’ll be new menu concepts—perhaps a new broth—added to the mix every six months via a secret source from Kyoto (a.k.a., owner Jun Okamura’s high-school BFF). Also worth mentioning is Union Wood Company’s industrial approach to the restaurant’s design (read wooden long tables, woodwork shop aprons and eclectic bulb pendant lighting).
