Maple Leaf Antipasto Pasta Salad
Ingredients:
- 2 cups Catelli Maple Leaf Pasta
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1/2 cup marinated artichoke hearts, chopped
- 1/4 cup red onion, thinly sliced
- 1/2 cup mozzarella pearls or cubed cheese
- 1/4 cup fresh basil, torn
- 3 tbsp olive oil
- 1 tbsp red wine vinegar
- Salt and pepper to taste
Instructions:
- Cook pasta according to package directions. Drain and rinse under cold water.
- In a large bowl, combine all ingredients and toss gently to coat.
- Chill before serving and garnish with extra basil.
