In this Q&A, sustainability advocate and coffeehouse leader Candice-Leigh Gray shares how used coffee grounds are becoming an unexpected hero in the gardening world—offering an easy, eco-friendly way to nourish your soil, reduce waste, and grow something beautiful, no green thumb required. —Noa Nichol

What’s one thing most people get completely wrong about “good” soil?

Most people think of soil as dirt and what you add to it, like fertilizer.   What they do not realize is that soils have a complex ecosystem. It’s not about “good” soil, it’s about how the soil functions; it provides essential nutrients, water and space to grow. If the soil doesn’t have enough of what the plant needs, they cannot grow properly and begin to die. When you add organic material like coffee grounds, you’re not just feeding the plant, you’re feeding the entire ecosystem to give it a little more structure and strength.

Used coffee grounds are having a bit of a gardening moment. What makes them so effective?

What makes them so effective is the practicality. After brewing, they’re close to neutral in pH, so you don’t have to worry about damaging your plants. They add organic matter and have high nutrient value. They reduce the amount of waste being taken to the landfills to recycle back through the earth. Earthworms are very attracted to coffee grounds, which help nutrient cycling and aerate the soil. It is a natural deterrent for ants, slugs and snails.  But the biggest thing I’ve seen is how they improve the texture of the soil over time. You’re taking something you would normally throw out every morning and turning it into something your plants can use, which makes it easy for people to stick with.

Is there a right way and a wrong way to use coffee grounds?

The easiest way to think about it is that they work best when they’re mixed in, not piled on. I tell people to add them into compost or blend them with things like leaves or grass. If you dump a thick layer straight onto your soil, it can block water and airflow. If you have a sizeable garden, you’ll want to head to your local Starbucks coffeehouse to grab a big, free bag of Grounds for Your Garden to use as needed! For small spaces like balcony gardens, how can coffee grounds make a difference?

They’re perfect for small spaces. When you’re working with above ground gardens, pots and planters, the soil has fewer nutrients as it does not get the nutrients from deeper in the ground and does not retain moisture. Even a small scoop of coffee grounds mixed in can help retain the moisture and give plants a bit of a boost. I’ve seen great results with tomatoes, peppers, herbs and even strawberries on a patio. You don’t need a backyard to see the impact.

What’s your go-to “lazy gardener” hack?

Tie it to something you already do. If you make coffee every day, just save the grounds and add a handful into your soil once or twice a week. That’s it. No complicated system. I’ve done that with my own plants and even with something as simple as tomatoes, you can see the difference over time. It’s low effort, but it builds. My family has done that with our own plants for many years.

When it comes to composting, what should we add and avoid?

I like to keep it simple: balance your greens and your browns. Coffee grounds count as greens, along with natural food scraps. Then you want to balance that with things like dry leaves, cardboard or grass clippings. That mix is what helps everything break down properly, giving the plants necessary nutrients like phosphorus in a natural way. What I tell people to avoid are things like oils, meat or anything heavily processed containing salt, because that’s where you start running into smell and pest issues.

What’s one coffee grounds myth you’d love to debunk?

That they’re too acidic for plants. That comes up all the time. The truth is, once coffee has been brewed, most of that acidity is gone. In fact, used grounds are pretty neutral, so they’re safe for most plants as long as you’re not overdoing it.

What’s been the most surprising reaction from people trying it?

How quickly people come back for more. We’ll put out several bags of grounds at my Starbucks location and they’re gone the same day, especially this time of year. What’s really interesting is the mix of people. We have farmers picking them up in larger amounts, students grabbing some for a school projects and regular customers just trying it at home. It turns into something people look forward to and come back for, not just something they try once. People come in to let me know the surprisingly positive impact is has on supporting the growth and stability in their gardens.

For someone intimidated by gardening, what’s the easiest way to get started?

Start with one plant to keep it simple. Something like herbs or tomatoes is a great place to begin because they’re pretty forgiving. You don’t need a full garden setup. A pot, some soil and a small habit like adding coffee grounds is enough. Once you see something grow, it becomes a lot less intimidating. Sometimes you need to experiment for yourself to see what works and what doesn’t. This is how I’ve learned sustainability practices over the years.

What’s one other household item that can double as a plant booster?

Egg cartons are one of my favourites. You can use them to start seedlings and they break down naturally over time. I’ve even used them with coffee grounds to get things started. It’s a really simple way to reuse something you already have and not overcomplicate the process.
