Vancouver’s most enchanting dining experience is back. The Garden Dinner Series at the Fairmont Waterfront returns this summer with three unforgettable evenings of seasonal cuisine, fine B.C. wines, and live music—set under open skies atop one of the city’s most vibrant rooftop gardens.
Launching June 19, with additional dates July 24 and August 21, this three-part culinary series offers a multi-course menu by Executive Chef Harris Sakalis, paired with vintage pours from some of British Columbia’s most beloved wineries: French Door Estate Winery, Burrowing Owl Estate Winery, and Quails’ Gate Estate Winery. In a Garden Series first, each winery will showcase exclusive selections from their vintage libraries—an elevated treat for wine lovers.
The open-air dinners unfold within the Fairmont’s own rooftop oasis, complete with flourishing herbs, edible flowers, and honeybee hives. Rooftop-harvested honey makes an appearance in select dishes and cocktails, including a signature gin crafted in partnership with Wayward Distillery. Guests can also expect stories from Fairmont collaborators like Chief Beekeeper Julia Common, whose work with the hotel apiary connects each plate to a greater purpose.
The menus spotlight peak-season West Coast ingredients—think B.C. spot prawns, halibut, and regionally sourced meats—designed to complement each evening’s wine pairings. Live music from local artists adds to the immersive atmosphere, echoing through the garden as the sun sets over the North Shore mountains.
